Trained in some of the finest establishments in French-speaking Switzerland - Le Rivage (Lutry), the Lausanne Palace, Le Beau-Rivage (Geneva) - Yohann Gsponer decided to take over the reins of the former Hôtel du Monde, in Grandvaux, in the middle of 2010. It was a real coup de coeur shared with his wife Céline, who is responsible for the reception and management of the restaurant, which they transformed together and renamed Tout un monde... Behind his stoves, the Chef concocts a cuisine that is both generous and subtle, and has been awarded 15 Gault & Millau points. 
 

His local producers

A cheesemaker and a bit of a magician, he is the only feta producer in Switzerland.

Producer of natural artisanal oils pressed in the old way at the Moulin de Sévery since 1598.
