Dézaley
Dézaley is the flagship ‘appellation’ of Lavaux. It is the only one, with Calamin, to be classed as a “Grand Cru”. Comprising 90% Chasselas, its terraces with their exceptional exposure imbue the wine with a body and remarkably persistent bouquet.
This wine only reveals its full character after two or three years. At this stage one finds a complex structured wine with flavours of almond and toast, rounded out with the fragrances of tea and honey.
The first property in Lavaux to grow vines, Dézaley is mentioned as early as the XIIth century. It was in fact Guy de Maligny, Bishop of Lausanne, who offered this land to the Convents of Hautcrêt and Montheron in 1141 ; with the mission of clearing it and planting vines. After some decades, the convents entrusted the growing to laymen. In the XVIth century, after the occupation of Canton of Vaud by the Bernese, the city of Lausanne acquired the by now famous Abbey Vineyards and Monks’ Vineyards, and thus became the Canton’s winegrower.
Still today, the city carries on an old custom: the sale of wine at auction each year at the beginning of December.
