Papet Vaudois
Papet Vaudois is a traditional Canton of Vaud dish. It’s a mixture of leeks (pronounced “porreaux” in the Vaud countryside) and potatoes, cooked into a "papette", a sort of thick puree.
Sometimes cream is added, with white wine or vinegar. “Papet” is traditionally served with a Vaud sausage or a sausage made of cabbage, regional specialities made of pork and/or cabbage.
